Loaded Beefy Nacho Griller Recipe

Before I knew that Taco Bell was sacking the Loaded Grillers, I had never bought one. The Loaded Beefy Nacho Griller didn’t appeal to me for a long while because I was so stuck in my ways from when I previously worked at Taco Bell. I wanted my bowls of Cheesy Fiesta potatoes, and maybe a chicken chalupa if I was feeling frisky. We ordered one during the first week of taste testing, and I discovered that I actually liked them. No wonder people were upset about these guys going away too!

This is a very bare bones, simple recipe to get your Taco Bell recreation on the table as fast as possible. There’s no homemade nacho cheese or special spice blend for the taco meat. This is 100% Taco Bell. No one goes to Taco Bell expecting gourmet shit, so you’re not going to get gourmet shit out of me here. No sir. No ma’am.

Ingredients:
  • 1 lbs ground beef
  • 1 sachet of taco seasoning, your choice
  • Fajita style flour tortillas
  • 1 can nacho cheese
  • Chili cheese fritos, or tortilla strips
  • 1 small yellow onion
  • 1 clove garlic


  1. Dice onion and garlic while your saute pan heats to medium. Add a dash of oil to the pan and saute your vegetables until the onions are translucent. Add ground meat immediately. Cook until browned, and drain the fat. Prepare according to the instructions on your taco seasoning packet.
  2. When your beef is finished, set aside. Heat a griddle pan or large skillet over the same medium heat. Use this to warm your tortillas. This takes only a few seconds on each side. They need to be pliable to wrap your griller.
  3. Lay warmed tortilla on a flat surface. Leave your pan warm on the oven while you form your grillers.
  4.  Add a large spoonful of warmed nacho cheese onto the tortilla, then add about two similar size spoonfuls of meat onto the top. Take a handful of your chip of choice and crush slightly before laying on top.
  5. Fold the corners of your tortilla in about ¼ of the way over your fillings. Then take the edge of the tortilla nearest to you and fold it over the corners and filling. Tuck as well as you can before rolling over itself to produce a tiny burrito.
  6. Place your griller seam side down onto the cooking surface. If you have a bacon weight or small cast iron, place on top. If not, it’s okay! Push it down a little and let it go. Check it after about a minute for a brown bottom that seals your griller. Flip and allow to collor on the other side.
  7. Repeat the process with as many grillers as you like.
