This sausage, egg, and cheese breakfast bake comes down to me from my mother and her Sunday School teacher group from back when I was a kid. Whenever my mother visits, we wind up making some variation of this simple creation for our breakfasts that week. It seemed only right to make it for you all and show it off in case you too could use something different when you’ve got guests for breakfast or brunch at home.

This recipe uses minimal ingredients, and that makes it perfect for pulling together quickly in the morning before an event or while you’re waiting for your guests to wake up. If you’re interested in making it just for yourself, it’s great for slicing into servings and packing away individually for meal prep. I’m a big fan of the corner pieces!

Personal Pan Breakfast Strata

I've been fascinated by the idea of a strata since seeing them on the menu at Green Bay favorite, Two Birds Bakery Cafe, but making one for myself at home seemed such a daunting task since so many recipes for strata are for large, family size casseroles meant to feed a gaggle of people on a special morning. This is not that kind of recipe. This recipe is for those that want to treat themselves. 

It's also made with more than 90% local ingredients. From the eggs to the bread, nearly everything was purchased from our local farmers in Northeast Wisconsin. If you're in the area and interested in recreating this recipe loyally, keep an eye out for most of these Ingredients with your Green Bay Saturday Morning Farmers' Market vendors. Special shout outs are due to Adam's Heirlooms and Voyageur Sourdough since most of the ingredients for this recipes are sourced from their stands.

Spinach and Artichoke Frittata

There are few breakfast options in life I love more than a frittata. It’s a quiche without all the work of a crust in my eyes, but they have fast become a luxury with the price of eggs in early 2025. This spinach and artichoke frittata is there to use up any expensive eggs that you haven’t got through after impulse buying a bunch several weeks ago when you found them for less than eight dollars a dozen. 

The flavors of appetizer favorite, spinach and artichoke dip, combine with the savory egg to create a delicious and protein packed way to start your day. This frittata is also leftovers friendly! Enjoy for 2-3 days afterward if you’re using it for meal prep, and freeze any that you won’t get through in that timeframe for a tasty emergency breakfast. 

You could also cut rounds out of this frittata to add to a breakfast sandwich rather than eating a triangle out of it for each meal. I recommend a toasted english muffin, some additional butter, and a few slices of bacon.
