Spinach and Artichoke Frittata

There are few breakfast options in life I love more than a frittata. It’s a quiche without all the work of a crust in my eyes, but they have fast become a luxury with the price of eggs in early 2025. This spinach and artichoke frittata is there to use up any expensive eggs that you haven’t got through after impulse buying a bunch several weeks ago when you found them for less than eight dollars a dozen. 

The flavors of appetizer favorite, spinach and artichoke dip, combine with the savory egg to create a delicious and protein packed way to start your day. This frittata is also leftovers friendly! Enjoy for 2-3 days afterward if you’re using it for meal prep, and freeze any that you won’t get through in that timeframe for a tasty emergency breakfast. 

You could also cut rounds out of this frittata to add to a breakfast sandwich rather than eating a triangle out of it for each meal. I recommend a toasted english muffin, some additional butter, and a few slices of bacon.

Cheesy Bacon Egg Bites

Prior to this egg shortage in the States, I used to be one of those people that occasionally had eggs go bad in the refrigerator. I’d forget to use them, or simply not have anything I wanted to make. Now that the cheapest eggs in a NE Wisconsin grocery store are running over six bucks a dozen, I cannot let myself get that lazy anymore. As a result, I wound up with some delicious Cheesy Bacon Egg Cups to freeze for meal prep.

Bacon + Cheese is always a good time, and this quick grab’n’go breakfast is no exception. Add the shredded cheese of your choice, and if you’re looking for a little more, some diced cooked onions and bell peppers help add some bulk. These freeze well and keep for about 1 month in the freezer when individually wrapped in plastic wrap.

Biscuits and Gravy is a staple of any midwestern breakfast menu, and it is typically one of my go to orders when I’m eating out. Lately, however, finances are tight. Finding ways to save a few dollars here and there usually starts with cutting out the extravagance of eating out. That means cooking the things I liked to eat most at restaurants at home. I started with this small batch biscuits and gravy, which fed me for about four meals.

Many other sausage gravy recipes out in the world are engineered to feed a family for a few mornings, not just one person. The measurements below can be doubled or tripled to suit your needs for company or family.
