It’s been a weird month in my life. I normally work from home for my day job, but circumstances beyond my control brought me temporarily back into the office. I can’t eat breakfast in the morning as I normally would. So, I decided to create an egg bite version of a breakfast taco to take in for myself and my other coworkers to start our collective day off right.
If you are on a low-carb diet for weight loss or health purposes, you can omit all steps involving the tortilla and bake as traditional egg bites. One of my coworkers that was a perspective taste tester is staunchly low carb, and so I made the option available to her. It turned out just fine!
