White Chicken Chili

It may not feel like soup season out there these days, but it’s soup season in my heart. One of my favorites is a white chicken chili. This one uses the fresh hatch chilis I found at the grocery store this week, but feel free to use canned green chilis or even poblanos in their place. The heat from these chilis is very mild, pleasantly warming for when the cold starts to come in. ​

Easy Mushroom Béchamel Pasta

I’m not a person that keeps pasta sauces on hand. I do, however, usually have a container of whole milk in my fridge. When I want a pasta meal without cooking down some canned tomatoes for an hour or two, a quick béchamel is the best way for me to go. This recipe is prepared with shreds from a rotisserie chicken, but feel free to include any leftover chicken in your rotation to amp up or change the flavor. The sauce is very bare bones for this reason. 

Weighted measurements are included for the chicken and the frozen peas, but feel free to use your heart. A handful of either is enough for a single serving. The sauce itself can stretch between 2-3 meals.

Rotisserie Chicken Burrito with a Fresno-Lime Sauce

The rotisserie chicken is a glorious offering from our modern American grocery stores, and it remains a tool of the old-poor to eat a little bit better than they would otherwise. This burrito is inspired by the California style burritos all over the internet these days to use some of that chicken meat a little more creatively for a single meal. 

The fresno-lime sauce really takes this to another level, providing moisture, tang, and heat to an otherwise weakly seasoned chicken. Enjoy this sauce on top of a plate of nachos or on tacos later in the week if you’re so inclined. It is one of my favorite things that I have developed in my home kitchen this week.

The original rendition of this recipe uses leftover cooked bell peppers and onions that I prepared earlier in the week to use across several meals that week, so the below recipe includes a step to cook your peppers and onions together to achieve an exact match to what I did that day.
