Totally Normal Arancini Recipe

These arancini are simple, although they do require a bit of prep time. Expect to give yourself an hour or so to make them correctly. The measurements for this recipe are, frankly, not exact. The eggs, flour, and panko are per 5 arancini. The sizes can vary depending on if you choose to use a mold or not, and this is designed to use up leftover rice. I can’t know how much rice you have left. 

Feel free to mix up the type of cheese you put inside your arancini. These are traditionally made with normal breadcrumbs rather than panko, but I personally prefer the texture of panko.

I learned to love risotto and its leftovers this month by making these arancini after a very successful evening with my mushroom and calabrian chili risotto. These are easily one of my favorite things I’ve made for myself in the last few months, second only to the single serve chicken pot pie from one of my rotisserie chicken challenges. ​

Mushroom and Calabrian Chili Risotto

As you may know, I have been filming everything I eat in the month of February to learn how to film and edit with more efficiency. That challenge has resulted in me trying something that I haven’t had much success at in the past, and one of those things is risotto. Until now, it was always something I tried with mixed success for people who are no longer in my life as a special treat. Making this mushroom and calabrian chili risotto is the first time I did it for myself since I started living alone again. Of course, it was perfect.

I use dried porcini mushroom to fortify the stock, but these are ridiculously expensive. I don’t even know where I bought the porcini mushrooms in my pantry. I used them because I had them. Other types of dried mushrooms are much cheaper and more accessible. Use what you can get your hands on without breaking the bank.

Similarly, wine is optional. I’m not a wine drinker, and the only reason I had the wine in my apartment was specifically for this sort of application.

Midwest Rice Pot

I’d never call this a jambalaya. Many of the hallmarks of cajun-creole cooking are not followed here. Jambalaya is, however, an inspiration for this recipe utilizing the full range of my veggie drawer to bring heat and flavor to a one pot meal big enough to feed a family of four. Cajun seasoning and jalapeno come together to bring a zing to the tomato-y, veggie-forward one pot dish.

Most of what I use, I keep in my refrigerator at almost all times. This is one of the most accessible rice recipes in my arsenal, and I’m glad to share it with you. Chicken broth can of course be made using a bouillon cube if you don’t keep box stock or homemade on hand! Our cajun seasoning recipe is now on the website if you’re interested, or Tony C’s will work just fine if you don’t want to mix your own.
