Totally Normal Arancini Recipe

These arancini are simple, although they do require a bit of prep time. Expect to give yourself an hour or so to make them correctly. The measurements for this recipe are, frankly, not exact. The eggs, flour, and panko are per 5 arancini. The sizes can vary depending on if you choose to use a mold or not, and this is designed to use up leftover rice. I can’t know how much rice you have left. 

Feel free to mix up the type of cheese you put inside your arancini. These are traditionally made with normal breadcrumbs rather than panko, but I personally prefer the texture of panko.

I learned to love risotto and its leftovers this month by making these arancini after a very successful evening with my mushroom and calabrian chili risotto. These are easily one of my favorite things I’ve made for myself in the last few months, second only to the single serve chicken pot pie from one of my rotisserie chicken challenges. ​

Three Ingredient Pesto Palmiers

This savory twist on the puff pastry cookie classic, the palmier, is a perfect addition to a celebratory snack table. Try these at New Years if you want an easy snack to share on New Years Eve.

These treats come together with only three store bought ingredients. You can, of course, jazz it up by using a homemade pesto if you don’t have a jarred brand that you enjoy or need to control the ingredients due to allergies in the family. Almost all pesto has pine nuts, and that can be bad for folks with nut allergies!

I'm very tempted to try other cheese/sauce combinations in this style. If you give them a shot, please let me know if you find anything else that comes together as well as pesto and mozzarella!

Hot Maryland Crab Dip

If I went out to eat while living in Delaware, the only thing I wanted from an appetizer menu was a pot of crab dip. Some people might consider this mixture of mayonnaise, cream cheese, and crab meat an abomination. It goes against the no cheese with seafood rule, but no one breaks that rule better than the folks of the Delmarva peninsula.

Now that I live in Wisconsin, crab dip is a rare treat that I have to actively seek out and make myself. The canned crab in the Midwest can’t compare to the quality of what you can get in the motherland of this delicious appetizer, but the combination remains a comforting, unique addition to any table.
This recipe can be doubled to feed a larger crowd. However, consider making this smaller version for gatherings that may already have a large variety of other tasty nibbles– or keep it for yourself and snack on it
