Kickaas Cheese - Market Vendor Highlight

Green Bay’s Saturday morning market has been my favorite event of the year since my first visit. This new, relaxed season with fewer COVID guidelines has opened it up in a whole new way, and over the course of this new season, I’ve become very familiar with a Green Bay Cheesemaker-- Kickass Cheese-- who is our highlighted vendor this week. There’s not much time left in the season, so they absolutely deserve the recognition while shoppers still have a chance to visit.

We stop by their stall every week when we visit the farmer’s market looking for something new to try. Brie, cheddars, curds, jack cheeses, swiss, parmesan… They’ve got something for everyone, and their flavors regularly rotate. If you want to get an idea of what they have to offer before you make a visit to them at the market, you can visit their website to see pictures and descriptions of every variety that they produce on the reg.

​The cheesemaker is knowledgeable, and so are the staff members at the stand when you’re picking out something for the week. They’ll talk you through every damn variety, give you a tiny taste of each to help you decide what you want to buy. You won’t leave without cheese in your bag. 

One of our favorite things to do is buy as much brie from them as possible, walk out to the Voyageur Bakehouse stand for a sourdough loaf, and go home with it. Hollow out that loaf, paint the inside with garlic butter, and then dump chopped brie inside. A short bake, and boom. Melty brie and toasty bread for dipping. A pure local creation, but not the only one that can be done with cheese from this vendor.

Many of their varieties are great snacking cheeses, but they also have varieties that lend themselves to cooking applications. I guarantee that their jack cheeses can become amazing mac and cheese bases. Their parmesan eats as well as any other produced in the states. We have never bought anything from them that we didn’t like.

There are very few chances left to get your hand on cheese produced by locals for locals, so stop in to see Kickaas Cheese tomorrow and tell them Eating Normal sent you. We love ‘em, and we’ll be seeing them at every opportunity left. Their website lists the dates of winter markets coming up once farmer’s market season is over so you can pick up their goodies for a holiday cheese plate. Mark your calendars. We already did.
