White People Taco Pies

I hesitate to call these little hand pies empanadas given that I'm making them with a pre-made pie crust out of the white people section of the grocery store, but they kind of are, right? Regardless, these hand pies are an easy way to get some extra mileage out of your leftover taco meat when Taco Tuesday starts to get stale in the rotation. The prep is minimal, and they can be baked in the air fryer so you don't have to turn on an oven or get the deep fryer involved. I enjoyed them next to some salsa and sour cream. 
@eatingnormal These White People Taco Pies are a perfect way to use up the leftover ground beef from the grocery store if you just can't take another night of white people taco night. They're easy to make in the airfryer, and they require minimal ingredients! Ingredients 1 large idaho potato, peeled and cubed 1/2 lbs leftover taco meat 1 pre-made pie crust 1/4 cup shredded cheese Instructions Peel and cube one large idaho potato. Add the cubes and a half pound of your taco meat to a nonstick skillet with a tablespoon of oil. Cook over medium heat for about five minutes before adding 1/4 cup of water to the pan. Cover and allow to simmer for about 15 minutes or until the potatoes are tender. Remove from the heat and allow to cool. If necessary, drain off excess water or fat. Meanwhile, remove your pie crust from the refrigerator and allow to come to room temperature. When your meat mixture has cooled and your pie dough can be rolled out, lay the pie sheet flat on the counter. Cut into 6 equal circles with a 3 inch cookie cutter, discard excess dough. Fill with a heaping teaspoon of your filling and add a sprinkle of shredded cheese. Close the circle around the filling and seal by pressing the edges with a fork. Cook in the air fryer at 350 degrees for 12 minutes.
