Shrimp Scampi for One

Shrimp Scampi is one of those things you are first introduced to in the midwest when you’re going to Olive Garden with your family and want to be a little fancy. This version leans in that direction and reduces it down to a size where you can make it for yourself this Lenten season if you are practicing, or you just want a tasty dinner. Don’t be afraid to shake some parmesan on at the end. That no cheese with fish rule is dumb, and we all secretly know it.

This recipe uses white wine, and it can be made more accessible by purchasing the tiny boxes rather than a full bottle if budget is a problem. I’d stay away from the ‘cooking wines’ in the regular grocery aisles. I also recommend a sauvignon blanc that is already a little tangy to help the lemon lift the meal.
