This personal pan manicotti scratches the itch for a stuffed pasta without forcing you to make an entire 9x13 pan of the stuff. For someone like me that lives alone, it's perfect! 

There are a number of shortcuts you can use to make this quicker and easier to make such as store bought ricotta and jarred sauce. The video example to your left includes a ricotta that I made by hand using Brian Lagerstrom's method and leftover sauce from my budget red sauce recipe. There is no shame in using convenience ingredients to feed yourself. Do whatever you gotta do!

It also uses the homemade ricotta from an earlier video, but obviously use whatever you prefer. Ingredients 1/2 cup ricotta cheese 1/4 cup grated parmesan 2 garlic scapes, chopped 1 whole yellow onion, chopped 3-4 manicotti tubes tomato sauce 1/2 cup mozzarella cheese Instructions Heat a sauté pan over medium heat with a drizzle of olive oil, and begin boiling water for your manicotti. Cook your chopped garlic scapes and onion until the onions become translucent. Allow to cool before adding to your ricotta. For a finer texture, blitz your alliums in a food processor before adding to the cheese. Grate parmesan into the cheese mixture and stir to combine. Set aside until your pasta is ready for stuffing. Cook the manicotti until they are slightly less than al dente. Find a small serving dish that is oven safe which will fit your manicotti noodles and ladle two spoonfuls of your favorite pasta sauce into the bottom. Then begin to stuff your manicotti with your cheese mixture, and place each filled manicotti into the dish. Cover with more sauce and cheese when the dish is full. To cook in an air fryer, set at 350 degrees and cook for 15 minutes. To cook in a standard oven, set to 350 degrees and cook for 20 minutes. #foodblogger #cooking #foodblog #comfortfood #cheese #foodie #pasta #airfryer ♬ original sound - Eating Normal
