Glazed Orange Cookies

Last week, I got got by a display at my grocery store advertising Dracula oranges– a variety of blood oranges, I thought, which were apparently miniature. I got a bag, got them home, and realized that ‘Dracula’ was just the name of the grower. I had only bought a bag of miniature mandarin oranges. What was I to do with these? Anything possible.

So, I adapted the common glazed lemon cookie into a glazed orange cookie for something different to use up some of these oranges. The flavor of the orange in these cookies is light and pleasant, which I found made them a perfect after dinner treat.

@eatingnormal These glazed orange cookies were born out of the frustrations of trying to use up a bag that I bought thinking they were an entirely different variety. Still, they came out tasty, and so I'm sharing the recipe with you in case orange flavored cookies might be interesting to you too. Enjoy! Ingredients Cookies 3 cups All Purpose Flour 1 teaspoon baking powder ½ teaspoon salt ½ teaspoon baking soda 2 sticks of unsalted butter, softened 1 and ¼ cups granulated sugar 2 tablespoons orange juice 1 tablespoon orange zest 1 teaspoon vanilla extract 1 large egg 2 cups Confectioners sugar 3 tablespoons orange juice 2 teaspoons orange zest Instructions Preheat the oven to 375 and prepare sheet pans with parchment paper. Zest and juice two small mandarin oranges to get the orange juice and zest necessary for the cookies. Add the zest to the granulated sugar in a separate bowl and mix until the sugar begins to turn orange. In a stand mixer, or with a hand mixer in a separate bowl, add the butter and sugar and cream together until the mixture is smooth. Then add the vanilla, egg, and orange juice. Further mix together. In a separate bowl, combine the flour, baking powder, salt, and baking soda. Whisk to evenly distribute rising agents before adding to the creamed butter and sugar mixture. Mix together slowly until a dough forms. Using a tablespoon scoop, roll dough into 1 inch size balls and place on the cookie sheet 1 inch apart. Bake for about 12 minutes. Allow to cool before glazing. For the icing, whisk together the remaining confectioner’s sugar, zest, and juice.
