Chicken and Corn Chowder

Meal two of our rotisserie chicken series is a tasty chicken and corn chowder in a smaller format to make sure someone that lives alone like myself can get through it before it goes bad in the freezer. It’s also a great way to use up any corn that you froze from the end of the season. I often keep my cobs of corn after stripping the kernels themselves in my freezer regardless of if I bought the ears at the market or at the grocery store for just this purpose. 

 Dairy can be frozen, but it doesn’t hold up to the process as well as some other soups. If you have leftovers from this meal, freeze them in a single layer and eat within one month.

For pricing purposes, olive oil, salt, pepper, and flour have been left out assuming that is on hand. That will of course increase the price of the recipe if you are buying them at the store in preparation.
