Cheesy Bacon Egg Bites

Prior to this egg shortage in the States, I used to be one of those people that occasionally had eggs go bad in the refrigerator. I’d forget to use them, or simply not have anything I wanted to make. Now that the cheapest eggs in a NE Wisconsin grocery store are running over six bucks a dozen, I cannot let myself get that lazy anymore. As a result, I wound up with some delicious Cheesy Bacon Egg Cups to freeze for meal prep.

Bacon + Cheese is always a good time, and this quick grab’n’go breakfast is no exception. Add the shredded cheese of your choice, and if you’re looking for a little more, some diced cooked onions and bell peppers help add some bulk. These freeze well and keep for about 1 month in the freezer when individually wrapped in plastic wrap.
