White People Taco Pie, Version 2

This version of a white people taco pie is a Shepherd's Pie instead of a hand pie like I put out a few weeks ago. It’s beef, but I’m from the Midwestern USA. It was always shepherd’s pie here when it was made with beef. We simply didn’t have ground lamb in the 90’s. Call it a cottage pie if you must, but whatever you call it, it’s delicious.

As far as meals I make with leftover other meals are concerned, this one rose to the top of the list real quick. The smooth mashed potatoes with the spicy taco meat and veggie mixture underneath is a fun mash up.

Ingredients: 1 cup leftover taco meat ½ cup mashed potatoes 2 small sweet peppers 1 large carrot ¼ cup frozen corn ¼ cup frozen peas Handful of shredded cheese Instructions: Preheat a skillet over medium heat while chopping your fresh vegetables. Add to the pan with a tablespoon of oil and cook until it begins to soften, about 3 minutes, before adding your frozen veggies. After another five minutes of cooking, remove veggies to a separate container. Add your leftover taco meat to the pan to warm through, and reintroduce about a quarter cup of your veggie mixture to the meat. Stir to combine. Remaining veggies can go into your eggs in the morning. Add your mixture into a large oven safe ramekin and top with a handful of shredded cheese before spreading your preferred mashed potatoes over the top. Bake in your airfryer for about 10 minutes at 350 degrees to warm it all through and melt the cheese under the potatoes. I hesitate to call these little hand pies empanadas given that I'm making them with a pre-made pie crust out of the white people section of the grocery store, but they kind of are, right? Regardless, these hand pies are an easy way to get some extra mileage out of your leftover taco meat when Taco Tuesday starts to get stale in the rotation. The prep is minimal, and they can be baked in the air fryer so you don't have to turn on an oven or get the deep fryer involved. I enjoyed them next to some salsa and sour cream. 
@eatingnormal These White People Taco Pies are a perfect way to use up the leftover ground beef from the grocery store if you just can't take another night of white people taco night. They're easy to make in the airfryer, and they require minimal ingredients! Ingredients 1 large idaho potato, peeled and cubed 1/2 lbs leftover taco meat 1 pre-made pie crust 1/4 cup shredded cheese Instructions Peel and cube one large idaho potato. Add the cubes and a half pound of your taco meat to a nonstick skillet with a tablespoon of oil. Cook over medium heat for about five minutes before adding 1/4 cup of water to the pan. Cover and allow to simmer for about 15 minutes or until the potatoes are tender. Remove from the heat and allow to cool. If necessary, drain off excess water or fat. Meanwhile, remove your pie crust from the refrigerator and allow to come to room temperature. When your meat mixture has cooled and your pie dough can be rolled out, lay the pie sheet flat on the counter. Cut into 6 equal circles with a 3 inch cookie cutter, discard excess dough. Fill with a heaping teaspoon of your filling and add a sprinkle of shredded cheese. Close the circle around the filling and seal by pressing the edges with a fork. Cook in the air fryer at 350 degrees for 12 minutes. Rotisserie Chicken Burrito with a Fresno-Lime Sauce

The rotisserie chicken is a glorious offering from our modern American grocery stores, and it remains a tool of the old-poor to eat a little bit better than they would otherwise. This burrito is inspired by the California style burritos all over the internet these days to use some of that chicken meat a little more creatively for a single meal. 

The fresno-lime sauce really takes this to another level, providing moisture, tang, and heat to an otherwise weakly seasoned chicken. Enjoy this sauce on top of a plate of nachos or on tacos later in the week if you’re so inclined. It is one of my favorite things that I have developed in my home kitchen this week.

The original rendition of this recipe uses leftover cooked bell peppers and onions that I prepared earlier in the week to use across several meals that week, so the below recipe includes a step to cook your peppers and onions together to achieve an exact match to what I did that day.
