Three Ingredient Pesto Palmiers

12/30/2024

This savory twist on the puff pastry cookie classic, the palmier, is a perfect addition to a celebratory snack table. Try these at New Years if you want an easy snack to share on New Years Eve.

These treats come together with only three store bought ingredients. You can, of course, jazz it up by using a homemade pesto if you don’t have a jarred brand that you enjoy or need to control the ingredients due to allergies in the family. Almost all pesto has pine nuts, and that can be bad for folks with nut allergies!

I'm very tempted to try other cheese/sauce combinations in this style. If you give them a shot, please let me know if you find anything else that comes together as well as pesto and mozzarella!

Single Serve Tatertot Hotdish

The hotdish is a north-midwestern national treasure, and everyone’s family has their own recipe. This recipe is for people like me that cook for themselves and themselves alone lately. Being a one person household doesn’t mean foregoing the comforts of home.

Utilize a rotisserie chicken to take some of the extra work out of this already simple recipe. This recipe could also be adapted with a variety of frozen produce depending on what you already have in the freezer. I'd love to hear what kind of combinations you come up with if you give this a try yourself!

@eatingnormal This tiny hotdish is sure to soothe homesickness for a north-midwesterner and warm the soul on a cold winter's night. Recipe Below! #recipes #cookingchallenge #budgetcooking #cooking #rotisseriechicken #foodblog #comfortfood #eatingnormal ♬ original sound - Eating Normal

Single Serve Pot Pie

Picture
This time around with the Rotisserie chicken challenge, we’re cooking some classic, warm weather comfort foods in single serve format. To begin, I’ve got a chicken pot pie with a pie crust topper for those of us cooking for only ourselves most nights. This filling can be scaled up or down depending on how many pot pies you want to make.

This is a perfect recipe for someone living home alone. I consider this meal to be one of the best I created for myself this year. I would never have thought to do something like this if not for the first Rotisserie Chicken Challenge. Thanks to readers and watchers that got involved in that.

As usual, I have prepared a cost breakdown using ingredients from Walmart, as it is usually the cheaper option, but also the most accessible for many people in the US.
