Glazed Orange Cookies

Last week, I got got by a display at my grocery store advertising Dracula oranges– a variety of blood oranges, I thought, which were apparently miniature. I got a bag, got them home, and realized that ‘Dracula’ was just the name of the grower. I had only bought a bag of miniature mandarin oranges. What was I to do with these? Anything possible.

So, I adapted the common glazed lemon cookie into a glazed orange cookie for something different to use up some of these oranges. The flavor of the orange in these cookies is light and pleasant, which I found made them a perfect after dinner treat.

@eatingnormal These glazed orange cookies were born out of the frustrations of trying to use up a bag that I bought thinking they were an entirely different variety. Still, they came out tasty, and so I'm sharing the recipe with you in case orange flavored cookies might be interesting to you too. Enjoy! Ingredients Cookies 3 cups All Purpose Flour 1 teaspoon baking powder ½ teaspoon salt ½ teaspoon baking soda 2 sticks of unsalted butter, softened 1 and ¼ cups granulated sugar 2 tablespoons orange juice 1 tablespoon orange zest 1 teaspoon vanilla extract 1 large egg 2 cups Confectioners sugar 3 tablespoons orange juice 2 teaspoons orange zest Instructions Preheat the oven to 375 and prepare sheet pans with parchment paper. Zest and juice two small mandarin oranges to get the orange juice and zest necessary for the cookies. Add the zest to the granulated sugar in a separate bowl and mix until the sugar begins to turn orange. In a stand mixer, or with a hand mixer in a separate bowl, add the butter and sugar and cream together until the mixture is smooth. Then add the vanilla, egg, and orange juice. Further mix together. In a separate bowl, combine the flour, baking powder, salt, and baking soda. Whisk to evenly distribute rising agents before adding to the creamed butter and sugar mixture. Mix together slowly until a dough forms. Using a tablespoon scoop, roll dough into 1 inch size balls and place on the cookie sheet 1 inch apart. Bake for about 12 minutes. Allow to cool before glazing. For the icing, whisk together the remaining confectioner’s sugar, zest, and juice. Easy Mushroom Béchamel Pasta

I’m not a person that keeps pasta sauces on hand. I do, however, usually have a container of whole milk in my fridge. When I want a pasta meal without cooking down some canned tomatoes for an hour or two, a quick béchamel is the best way for me to go. This recipe is prepared with shreds from a rotisserie chicken, but feel free to include any leftover chicken in your rotation to amp up or change the flavor. The sauce is very bare bones for this reason. 

Weighted measurements are included for the chicken and the frozen peas, but feel free to use your heart. A handful of either is enough for a single serving. The sauce itself can stretch between 2-3 meals.

White People Taco Pies

I hesitate to call these little hand pies empanadas given that I'm making them with a pre-made pie crust out of the white people section of the grocery store, but they kind of are, right? Regardless, these hand pies are an easy way to get some extra mileage out of your leftover taco meat when Taco Tuesday starts to get stale in the rotation. The prep is minimal, and they can be baked in the air fryer so you don't have to turn on an oven or get the deep fryer involved. I enjoyed them next to some salsa and sour cream. 
@eatingnormal These White People Taco Pies are a perfect way to use up the leftover ground beef from the grocery store if you just can't take another night of white people taco night. They're easy to make in the airfryer, and they require minimal ingredients! Ingredients 1 large idaho potato, peeled and cubed 1/2 lbs leftover taco meat 1 pre-made pie crust 1/4 cup shredded cheese Instructions Peel and cube one large idaho potato. Add the cubes and a half pound of your taco meat to a nonstick skillet with a tablespoon of oil. Cook over medium heat for about five minutes before adding 1/4 cup of water to the pan. Cover and allow to simmer for about 15 minutes or until the potatoes are tender. Remove from the heat and allow to cool. If necessary, drain off excess water or fat. Meanwhile, remove your pie crust from the refrigerator and allow to come to room temperature. When your meat mixture has cooled and your pie dough can be rolled out, lay the pie sheet flat on the counter. Cut into 6 equal circles with a 3 inch cookie cutter, discard excess dough. Fill with a heaping teaspoon of your filling and add a sprinkle of shredded cheese. Close the circle around the filling and seal by pressing the edges with a fork. Cook in the air fryer at 350 degrees for 12 minutes.
