The rotisserie chicken is a glorious offering from our modern American grocery stores, and it remains a tool of the old-poor to eat a little bit better than they would otherwise. This burrito is inspired by the California style burritos all over the internet these days to use some of that chicken meat a little more creatively for a single meal.

The fresno-lime sauce really takes this to another level, providing moisture, tang, and heat to an otherwise weakly seasoned chicken. Enjoy this sauce on top of a plate of nachos or on tacos later in the week if you’re so inclined. It is one of my favorite things that I have developed in my home kitchen this week.

The original rendition of this recipe uses leftover cooked bell peppers and onions that I prepared earlier in the week to use across several meals that week, so the below recipe includes a step to cook your peppers and onions together to achieve an exact match to what I did that day.

Shrimp Scampi is one of those things you are first introduced to in the midwest when you’re going to Olive Garden with your family and want to be a little fancy. This version leans in that direction and reduces it down to a size where you can make it for yourself this Lenten season if you are practicing, or you just want a tasty dinner. Don’t be afraid to shake some parmesan on at the end. That no cheese with fish rule is dumb, and we all secretly know it.

This recipe uses white wine, and it can be made more accessible by purchasing the tiny boxes rather than a full bottle if budget is a problem. I’d stay away from the ‘cooking wines’ in the regular grocery aisles. I also recommend a sauvignon blanc that is already a little tangy to help the lemon lift the meal.

Sometimes, you just need to make soup. This Italian Sausage and White Bean Stew was born from such necessity on a cold winter’s night in Northeast Wisconsin, and I am only just getting it posted as the weather starts to shift into spring mode. However, you never know when the weather will shift and prove we have been in a false spring all along. If you find yourself needing a tasty comfort meal that utilizes pantry ingredients at the helm, look no further than this one.

I often keep Italian sausage on hand for use in my pasta sauces, so this came at the end of a long break from going to the grocery store. It’s one of the recipes that I’ve developed out of my leftover ingredients at the end of the week that I’m super proud of, and I hope it will be something to help you pinch pennies as grocery prices continue to rise.

The spices of the sausage do most of the heavy lifting here, removing the need to do any shopping in the spices aisle if you’re just starting out. The cans of beans and tomatoes that help bulk it up are all shelf stable, and if you have freezer veggies taking up space, this is a great way to use those up.
