Cheesy Bacon Egg Bites

2/12/2025

Prior to this egg shortage in the States, I used to be one of those people that occasionally had eggs go bad in the refrigerator. I’d forget to use them, or simply not have anything I wanted to make. Now that the cheapest eggs in a NE Wisconsin grocery store are running over six bucks a dozen, I cannot let myself get that lazy anymore. As a result, I wound up with some delicious Cheesy Bacon Egg Cups to freeze for meal prep.

Bacon + Cheese is always a good time, and this quick grab’n’go breakfast is no exception. Add the shredded cheese of your choice, and if you’re looking for a little more, some diced cooked onions and bell peppers help add some bulk. These freeze well and keep for about 1 month in the freezer when individually wrapped in plastic wrap.

@eatingnormal With the price of eggs these days, we simply can't afford to waste 'em if we've got 'em. These Cheesy Bacon Egg Bites are perfect for killing any eggs you have managed to get your hands on before they go bad, and they freeze well for workday breakfasts! There will be no what I eat in a day video today since yesterday was honestly some of the most boring eating I did, even when sick. Totally Normal Arancini Recipe

These arancini are simple, although they do require a bit of prep time. Expect to give yourself an hour or so to make them correctly. The measurements for this recipe are, frankly, not exact. The eggs, flour, and panko are per 5 arancini. The sizes can vary depending on if you choose to use a mold or not, and this is designed to use up leftover rice. I can’t know how much rice you have left.

Feel free to mix up the type of cheese you put inside your arancini. These are traditionally made with normal breadcrumbs rather than panko, but I personally prefer the texture of panko.

I learned to love risotto and its leftovers this month by making these arancini after a very successful evening with my mushroom and calabrian chili risotto. These are easily one of my favorite things I’ve made for myself in the last few months, second only to the single serve chicken pot pie from one of my rotisserie chicken challenges.
@eatingnormal These totally normal arancini are a product of my mushroom and calabrian chili risotto recipe from earlier in the week, but you can do this with any risotto, really. The best part is the mozz stuffed in the middle. I will say, I'm not sure if these are traditional at all. They were, however, delicious. #cookingvideo #comfortfood #foodie #foodblog #foodblogger #cooking #food #leftovers #rice #recipes ♬ original sound - Eating Normal

Mushroom and Calabrian Chili Risotto

2/3/2025

As you may know, I have been filming everything I eat in the month of February to learn how to film and edit with more efficiency. That challenge has resulted in me trying something that I haven’t had much success at in the past, and one of those things is risotto. Until now, it was always something I tried with mixed success for people who are no longer in my life as a special treat. Making this mushroom and calabrian chili risotto is the first time I did it for myself since I started living alone again. Of course, it was perfect.

I use dried porcini mushroom to fortify the stock, but these are ridiculously expensive. I don’t even know where I bought the porcini mushrooms in my pantry. I used them because I had them. Other types of dried mushrooms are much cheaper and more accessible. Use what you can get your hands on without breaking the bank.

Similarly, wine is optional. I’m not a wine drinker, and the only reason I had the wine in my apartment was specifically for this sort of application.

@eatingnormal I've struggled with risotto for years, but I've finally engineered my perfect version! It isn't necessarily traditional, however. You've been warned. You may have seen part of this in my What I Eat in a Day challenge for february.
