Buffalo chicken has a vice grip on the Midwest as if we invented it ourselves. We know we didn’t, of course, but we love it. As a result, we Buffalo anything that has chicken in it or on it. This single serve Buffalo Chicken Bacon Ranch mac and cheese is my personal love letter to the iconic, mildly spicy flavor that attends every football party and celebration I have ever attended.

This is yet another meal best accomplished from a rotisserie chicken, and its creation can be partnered with any of my other rotisserie chicken meals to add some variety to your weekly menu.

Egg Roll in a Bowl soups are quite common in the Midwest. It’s cold nowadays, and if we can make a thing into a soup to warm us through to our bones, we are going to do it. I took the classic Egg Roll in a Bowl and applied the flavors of several other egg roll recipes from creators such as the Woks of Life to jazz up a reliable ally in the war against Upper Midwestern Winters.

That said, the ingredients are fast becoming more and more accessible across the country. There was a time where shaoxing cooking wine would be an Amazon Only kind of purchase for me. Every grocery store I’ve ever visited in the city of Green Bay now carries it. Hopefully that trend continues in other regions of the country. If not, it is available online. You can skip it in favor of another ¼ cup of beef broth, but I think the wine adds necessary flavor to the soup.

Any leftover soup freezes well. I often pull out my leftovers of this soup to go with a dinner of pan fried dumplings or the shameful container of grocery store sushi. Enjoy with some fried wonton strips on top for some extra crunch.
